The story of this food is as long and as varied as the people involved, of which there are many. We learned how to make this distinct crust and many of other recipes from Mike Freeman while working at the then hole-in-a-wall Zelo, estd. 2000 in Los Angeles. He had spent years in the kitchen of Vicolo, estd. 1985 in San Francisco, under the leadership of Patricia Unterman. Mike generously taught us all that he knew about pizza, and graciously assisted us in taking it up the coast to Portland, where we chose to start a family and our family business. We have pride in our lineage, of staying true to the original recipes, our quality of ingredients, and passion to continually evolve and improve.
Our crust is prepared by hand using organic cornmeal sourced from Southeast Oregon and Northeast California that is stone ground at Bob’s Red Mill here in Portland. We also use sustainably grown Shepherd’s Grain flour, a progressive alliance of family farms local to the Northwest, and 100% pure olive oil. All toppings are prepared in-house daily using fresh, locally sourced produce whenever possible. Dressings, marinades, and brines are made from scratch to celebrate the loot of our locale.
Our sausage is made from all natural Carlton Farms pork, a family farm located in Carlton, Oregon. We cure our own pancetta, Tasso ham, Canadian bacon, maple bacon, and corned beef, and case our andouille, chorizo, bratwurst and chicken sausages to ensure quality and distinction.
Because of our limited capacity, we do not take reservations. For parties of six or more, calling ahead will help us seat you as promptly as possible. We ask that parties of 5 of more order pizza by the half or whole. For your convenience, up to two credit cards are accepted per table.
All pizzas are 12” and serve 2-3 three people easily. We offer pizza by the slice, half, or whole pie.
We offer a variety of craft sodas, bottled beers, three rotating draft microbreweries, red and white wine. Root beer floats, Zuccotto cake,and chocolate chip cookies are available for dessert.

Everything is cooked to order, so our wait times can range widely; anywhere between 20 minutes and 1 hr is typical. When you call to place your order, we will give you our best estimate at that time.
Our pizza is also available par-baked (by request) to cook at home. This is a great option if you do not plan to eat your pie immediately.
Pre-heat oven to 450-500 degrees. We suggest cooking the pizza on a cookie sheet, but if you are using a pizza stone, be sure to pre-heat the stone as well. Place pizza in oven and cook for 12-15 minutes, checking occasionally. The crust has been partially cooked, and all toppings are ready to eat, so you are just waiting for the bottom to be crisp and golden brown and the cheese to melt.
If your par-baked pizza arrives with some toppings on the sides, they are intended to be placed on your pie towards the end (pesto, tapenade, chutney) or after cooking (chives, basil, lemon oil).
